Capon of Morozzo: race with tender and delicate meat for refined dishes

During fairs or exhibitions, capons recognize themselves because they are flanked in pairs, unusual behavior for roosters.

Capon of Morozzo is a breed derived from the Blond hen of Piedmont and the White hen of Saluzzo. It is a typical products of the Cuneo area.

Identikit and main features

The capon of Morozzo is a male castrated cockerel. It borns from the Blond hen of Piedmont and the White hen of Saluzzo. The capon has a colouful plumage, generally red with black feathers on the tail and golden at the neck, while legs and the skin are yellow. These capons weigh about 2.5 kg.

Municipality of Morozzo (province of Cuneo).

History

The capon has very ancient origins, which date to the Roman Empire, when the breeding methods were already diffused.  In May 2001 was founded the “Consorzio per la tutela e la valorizzazione del Cappone di Morozzo e delle produzioni avicole tradizionali”.
