Caprauna turnip: particular mountain vegetable, versatile and very sweet

The recipes that use this turnip are many: you can taste them au gratin, use as ingredients for casseroles, serve with the bagna caoda or as a side dish for the sausage.

Identikit and main features

The Caprauna turnip is a large flat- rounded yellowish-white  root. The taste is a sweet, which increases where the yellow colour is more intense. It has an appendix root which provides the water and nutrition supply.

Area of production

It is produced in the municipalities of Caprauna and Alto in the Alta Val Tanaro.

History

It has always been an important production of turnips in the municipalities of Alto and Caprauna. The roots stored during the winter season were eaten by families, while culls fed the animals.
