Ingredients for 6 people

600 g / 21 oz knife-cut beef fillet, 100g/3½oz grated Grana Padano. 50ml/2fl oz milk, 300g/10½oz cream, salt and pepper, Evo oil, 6 washed salted anchovies.

Method

Heat the milk and the cream, add the parmesan, mix and add salt and pepper. Cut the beef into very thin slices, approximately 3-4mm/0.11inch. Bash the anchovies with a knife and add oil.
