The 12th edition of Cheese in Bra ended with a great success of visitors, the Slow Food event that every two years promotes quality production, the defence of the biodiversity of breeds and the link with the territory. With a turnover of 16.3 billion euros, the dairy sector is one of the most important in the national agro-food system, although in recent years there has been a decline in consumer products such as spreadable cheeses, standard uht milk and cow’s milk mozzarella .
Cheese, however, represents the other side of the coin, that of a dynamic segment made up of high quality small companies that are growing, confirming the greater attention to controlled products closer to environmental protection.
“This extraordinary edition just ended – says the founder Carlo Petrini – has consolidated the need for the entire world sector to meet and meet here in Bra, every two years. Even the French “affineurs” meet at Cheese for their meeting. Everything worked beautifully, like a Swiss machine even in order and cleanliness».
