History
The Langhe are one of the best food and wine places in Italy, this area is considered a work of art itself and the real expression of the piedmontese culture. White truffles, mushrooms, meat, hazelnuts, cheeses, Barolo and Barbaresco wines make this hills one of the best destinations for food and wine lovers. The Ceretto family, famous all over the world for the wine production, and the chef Enrico Crippa joined their common passion for the Langhe and in 2005 they opened two restaurants: “La piola “ and “Piazza Duomo”, located in the historical centre of Alba, the capital of the Langhe. One philosophy, based on research and quality, for two different kind of cooking experience. The protagonist of this story are the Ceretto family, famous wine producers who work every day to enhance the local products and Enrico Crippa, a talented young chef from Brianza, who wants to start a new and personal experience. It is not a challenge between the fine creativity of “Piazza Duomo” and the tradition of “La piola”, but it is rather a matter of educate people to valorise, eat well, drink well just to live better. In few years this project has reached a great success and today “Piazza Duomo” is one of the best places for those who love the “gourmand” cuisine and those who want to try new recipes, while “La piola” has become the reference point for the lovers of the real piedmontese tradition.
The vegetable garden
Who has already tried a soup realised using fresh vegetables will agree with who decides to have a personal vegetable garden. The difference between a local and private production and the wholesale is the rediscovery of tastes which have been forgotten during the years and substituted by anonymous and approved vegetables. The vegetables of these two restaurants are personally chosen by the chef from his gardens to offer only the best quality products to the customer. Enrico Crippa’s cooking is oriented to the local products, in particular meats and cheese, so have a private production of vegetables and herbs help and complete the creation of maximum quality recipes, because also the accompaniment ingredients are important.
The philosophy of “Piazza Duomo”
The kitchen of “Piazza Duomo” is the creativity kingdom of Enrico Crippa. Here, along with his crew, the chef create every day a particular recipe to satisfy even the palate of the most demanding costumers. Since the beginning he knows well the great potential of the local products, so Crippa has immediately used his international experience into a territory with a long lasting tradition such as the one of the Langhe, proposing new tastes, but remaining faithful to the local products. The red thread of his cooking is a careful selection of the products, which are chosen according to the season and transformed into a real work of art, as only great chefs can do.
