Since the ’80s, harvesting after harvesting, Paolo Saracco has become famous as high-quality Moscato producer: his wine expresses the best of the terroir. His vineyards extend for three kilometres and are covered with very ancient plants. Every year Paolo buys new lands looking those which have the best position and exposition to bring out the best from the grapes.
Moscato bianco di Canelli.
After the harvesting the grapes are softly pressed to maintain the aromatic part of the juice. The must is stored into steel vats at controlled temperature (-2°C). After the fermentation the wine is micro filtered and bottled to maintain the freshness and the aromas.
Straw yellow colour with green shades; fine perlage that indicates the good state of fermentation; floral scent, with notes of orange, peaches and thymus; the taste is elegant, intense and very persistent.
Biscuits, cakes, fruit and ice-cream, blue cheeses such as gorgonzola and cocktails.

Moscato is an aromatic wine recognised with the AOC denomination and it is produced in 52 municipalities spread around the provinces of Alesandria, Asti and Cuneo. It can be tasted still or sparkling and its alcohol content is included between 4.5 and 6.5%. Its particular sweetness is due to a partial fermentation of the sugar contained in the grapes.
