Winemaking
Spontaneous alcoholic fermentation into steel vats.

Maturation
12 months into barrels (30%new and 70% used) and 8 months into steel vats and 25hl wooden barrels.

Main features
Red ruby colour with grenade shades; intense scent with faded violets and red fruits notes; the taste is persistent and intense with a balanced freshness.

Pairings
Cured meat, fresh pasta with meat gravy, mushroom rice and red meat.

Service temperature
18 °C – 20 °C (65 °F – 68 °F)

Nebbiolo is a red wine with a controlled and guaranteed Denomination of Origin produced in some municipalities of Piedmont. The area of ​​origin of the grapes suitable for producing the wines with the controlled and guaranteed denomination of origin “Barolo”, whose first delimitation dates back to 31 August 1933, includes the territories of the municipalities of Barolo, Castiglione Falletto and Serralunga d’Alba and part of the territories of the municipalities of La Morra, Monforte d’Alba, Roddi, Verduno, Cherasco, Diano d’Alba, Novello and Grinzane Cavour in the province of Cuneo.
